WHere is a simplified interpretation of a cocktail from a new drinks list. Designed as a batch prepared mix that is bursting with the flavours of the Christmas time, which makes it perfect for hosting a holiday party. Save the extra citrus syrup to use in morning drinks, sweets, or to mix additional servings of bikinis.
Bikini Recipe
Serves 10 servings
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Drink (produces 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Combine all the items inside a pan, heat until it reaches a simmer, mixing until the sugar dissolves. Next, remove from the burner allowing it to cool completely. Decant into an sterilised bottle, seal keeping it chilled, it can be stored for about one month.
Preparing the Batch Mix: Combine the specified liquid ingredients in a large bottle, leave to sit for one hour, then strain best through cheesecloth, to ensure it's fully clarified.
To serve: Pour 85ml from the batch mix into a cocktail shaker filled with ice, and agitate gently for about 60 seconds to cool it down. Strain into an frosted cocktail glass or a similar vessel, decorate with the cranberries and finish with a light spray of mandarin oil above the glass.
